Mackerel Tekwan

Tekwan is a traditional dish from Palembang that is very popular with the local people. It is made from a mixture of mackerel, special spices and tapioca flour, shaped into small balls resembling fish balls. Tekwan is served in a savoury prawn stock with a distinctive Palembang flavour.

As accompaniments, tekwan is usually served with:

• glass noodles

• wood ear mushrooms

• celery

• a sprinkling of fried shallots

This dish is best enjoyed whilst still warm, with chilli sauce served on the side.
